Mooli, the long white radish also called daikon or mullangi, has crisp, juicy white flesh and a peppery bite that softens as it cooks. Punjabi kitchens grate it into mooli paratha, and South Indian cooks put it in mullangi sambar and a quick poriyal. Sliced raw with lemon, salt and chilli, it makes a sharp salad for a heavy meal. The leaves can be cooked as a sabzi.
How to use it
Wash, trim and peel the mooli, then grate, slice or cube it. For mooli paratha, grate it, salt it and squeeze out the water, then mix with green chilli, ajwain and coriander and stuff into wheat dough. For sambar, add thick rounds to the simmering dal and tamarind and cook until tender. The squeezed juice can go into the paratha dough.
