Long beans, also called snake beans, yardlong beans or payatham kai, are thin, dark green pods that can grow to more than 30cm. They are firmer and less sweet than green beans and stay crunchy after cooking. Sri Lankan kitchens cook them in a long bean curry with coconut milk, and Keralan cooks make achinga payar thoran; they also go into stir fries and Thai salads.
How to use it
Wash the bunch and trim the tips, then cut into pieces of 2 to 3cm. For a thoran, temper mustard seeds and curry leaves, add the beans with turmeric, salt and a splash of water, cover for 6 to 8 minutes, then stir in coconut crushed with green chilli, garlic and cumin. For a stir fry, cut longer pieces and cook fast with garlic, chilli and soy sauce.
