Leeks are long white stems with dark green tops, from the same family as onions and garlic, with a sweeter, gentler taste. They melt down when cooked slowly and keep some bite in a quick stir fry. Sri Lankan cooks make a leeks curry and a leeks thel dala with dried chilli; they also go into soups, Indo Chinese fried rice and noodles, and omelettes.
How to use it
Trim the root and the tough dark tops, then slit the leek lengthways and rinse between the layers, where soil hides. For a Sri Lankan leeks fry, slice thinly and stir fry with onion, chilli flakes, turmeric, curry leaves and a little Maldive fish or dried shrimp. Sliced leek also goes into a pot of potato soup or a vegetable fried rice.
