KTC Sarson Ka Saag is the Punjabi winter dish of mustard leaves and spinach, cooked down with onion, garlic, ginger, green chilli and cumin, ready to heat from the 800g tin. At 48 per cent mustard leaf to 30 per cent spinach, the KTC is the milder one. The TRS Sarson Ka Saag 850g runs at 94 per cent mustard leaf, so take that if you want the sharper, more bitter saag and this if you want it rounder and greener. One tin serves four with roti.
How to use it
Heat it gently on the hob, stirring now and then, until it is piping hot. Finish it the way the pack suggests, with garlic fried in ghee or butter poured over the top, and eat it with makki di roti, white butter and a piece of gur. Plain roti or rice will do on a weeknight.
