Jackfruit seeds are the large, smooth, oval seeds from inside a jackfruit, covered in a thin pale skin. Once cooked, they turn soft and starchy with a nutty taste close to chestnut. South Indian and Sri Lankan cooks add them to dal, sambar and drumstick curry, fry them with spices as a side, or roast them in their skins as a snack.
How to use it
Always cook the seeds before eating. Boil them in salted water for 20 to 25 minutes, or pressure cook for 2 or 3 whistles, then peel off the white outer skin and the thinner brown skin beneath if you like. Halve them and add to a coconut based curry, a mango and seed curry or a kootu, or fry with turmeric, chilli and curry leaves until golden.
