Iceberg lettuce is a round, tightly packed head of pale green leaves that stay very crisp and cold. It has a mild, clean taste and a lot of crunch. Shred it for kebab rolls, shawarma and burgers, tear it into a green salad, or use whole cupped leaves as wraps for spiced mince, tikka or a chicken stir fry.
How to use it
Pull off any damaged outer leaves. To core it, knock the stalk end firmly on the worktop and twist the core out. Rinse the leaves in cold water and dry them well so dressing sticks. Shred finely with onion and tomato for the salad in a kebab or wrap, or separate whole leaves to fill with hot chilli chicken or keema.
