Green tomatoes are tomatoes picked before they ripen, firm and pale green, with a sharp, sour taste and dense flesh. They hold up well in cooking, so the tang comes through. Andhra and Tamil kitchens make a hot, sour chutney with them for idli, dosa and rice; Maharashtrian cooks make a quick sabzi; they also go into dal, pickles and fried green tomato slices.
How to use it
Wash and cut out the stalk end. For a South Indian green tomato chutney, fry chopped tomatoes with green chilli, garlic and a little tamarind until soft, cool and grind with salt, then temper with mustard seeds and curry leaves. For a quick sabzi, cook diced tomatoes with onion, peanuts, jaggery and goda masala. Thick slices can be dipped in seasoned besan and shallow fried.
