A bag of fresh green beans, firm pods that snap cleanly and cook to a sweet, tender bite. Beans are a weekday vegetable across South India and Sri Lanka: chopped fine for a beans thoran or poriyal with coconut, cooked in a Sri Lankan bonchi curry with coconut milk, or added to vegetable pulao, biryani and mixed vegetable sabzi.
How to use it
Top and tail the beans and chop them into small pieces, about 1cm. For a poriyal, temper mustard seeds, urad dal, dried chilli and curry leaves in oil, add the beans with salt and a splash of water, cover and cook for 5 to 7 minutes, then stir in grated coconut. For a Sri Lankan bean curry, simmer longer pieces with onion, turmeric, curry powder and thin coconut milk.
