Chayote is a pale green, pear shaped squash with a puckered base and crisp, juicy flesh. The taste is very mild, somewhere between cucumber and courgette, so it takes on the flavour of whatever it cooks with. In South India it is chow chow or bangalore kathirikai, cooked into kootu, sambar and poriyal; in Sri Lanka it goes into a coconut milk curry; and in the Caribbean it is cho cho, added to soups and stews.
How to use it
Peel the chayote under running water or with oiled hands, as the cut skin can leave a sticky film. Halve it, remove the soft seed in the middle, and cube the flesh. Cook it with moong dal, cumin, green chilli and coconut for chow chow kootu, or add it to sambar with drumstick and shallots. It cooks in 10 to 12 minutes and keeps a slight bite. Thin slices can also be eaten raw in salad.
