Goes well with this, all in one basket

      Bundle total: £3.19

A whole cauliflower, with a tight white head of florets wrapped in fresh green leaves. It is the vegetable behind aloo gobi, gobi paratha, gobi manchurian, cauliflower pakoras and gobi musallam, and it takes on spice beautifully. Roasted whole or in florets, it turns golden and nutty.

      How to use it

Pull off the leaves, cut the florets from the stalk and soak them in warm salted water for 10 minutes to clean them. For aloo gobi, fry the florets and cubed potato in oil with cumin seeds, turmeric, ginger and chilli, cover and cook gently until tender, then finish with garam masala and coriander. Grate the florets and stalk for gobi paratha filling, or coat them in a spiced cornflour batter and fry for gobi manchurian. The tender leaves and stalk can be chopped into a dry sabzi.

      Good to know

      • Called gobi or phool gobi
      • Choose a firm, heavy head with tight florets
      • The leaves and stalk are edible
      • Sold by the head
