Butternut squash has smooth, pale tan skin and a long neck of dense, deep orange flesh, with the seeds held in the round base. Cooked, it is sweet and nutty and turns soft and creamy. It works well in a pumpkin style curry, kaddu ki sabzi, a Sri Lankan coconut milk curry, a squash and lentil dal, or simply roasted with cumin and chilli.
How to use it
Trim both ends, peel the skin with a sturdy peeler, then cut the neck from the base and scoop out the seeds. Cube the flesh and cook it with mustard seeds, fenugreek, dried chilli, turmeric and a little jaggery and amchur for a sweet and sour kaddu ki sabzi. Simmer cubes with red lentils, ginger and turmeric for a golden dal. For roasting, toss wedges in oil, cumin seeds and chilli flakes and roast at 200°C for 30 to 35 minutes.
