Bottle gourd, sold as dudhi, lauki or ghiya, is a long, smooth, pale green gourd with soft white flesh that is mostly water. It tastes mild and slightly sweet, and cooks down quickly into whatever spices surround it. Indian homes cook it in lauki chana dal, dudhi kofta curry, raita and a milky dudhi halwa, and in South India as sorakkai kootu.
How to use it
Peel the gourd with a vegetable peeler, cut it in half and remove any large seeds from the centre. Cube it and cook with soaked chana dal, turmeric, tomato and a cumin and garlic tarka for lauki dal. For kofta, grate it, squeeze out the water, and bind with gram flour, chilli and coriander before frying the balls and simmering them in an onion tomato gravy. Grated and cooked slowly in milk with sugar, ghee and cardamom, it becomes halwa.
