Bitter gourd, known as karela in Hindi and pavakkai in Tamil, is a dark green gourd covered in ridges and bumps, with a clean, sharp bitterness that people who grow up with it come to love. Salting and frying tame the bitterness while leaving its character. It goes into stuffed karela, karela fry, pavakkai pitlai, and Sri Lankan karawila sambol and curry.
How to use it
Scrape the ridges lightly with a knife, slice the gourd into thin rounds and remove the larger seeds. Rub with salt and turmeric, leave for 20 minutes, then squeeze out the juice; this takes away much of the bitterness. Shallow fry the rounds until crisp and dark, then toss with chilli powder and amchur for karela fry, or mix with sliced shallot, tomato, green chilli and lime for karawila sambol. For stuffed karela, slit the gourds lengthwise, fill with a spiced onion masala and cook slowly in oil.
