A bag of dark purple aubergine, the large, glossy kind known as brinjal or baingan in Indian kitchens. The flesh is creamy and mild, and it soaks up oil and spice as it cooks, turning soft and silky. This is the aubergine for baingan bharta, Sri Lankan wambatu moju, a Bengali begun bhaja or a tray of roasted vegetables.

      How to use it

For bharta, char the aubergine whole over a gas flame or under a hot grill, turning until the skin blackens and the inside collapses, then peel and mash with fried onion, tomato, garlic, green chilli and coriander. For wambatu moju, cut it into fingers, rub with turmeric and salt, deep fry until golden, and toss with shallots, green chilli, vinegar, mustard and a little sugar. Slices dusted with chilli and turmeric shallow fry in a few minutes for begun bhaja.
