Ash gourd, also called winter melon, white pumpkin or petha, is a large oval gourd with green skin dusted in a pale, waxy bloom. Inside, the flesh is white, soft and full of water, with a very mild taste that takes on whatever it is cooked with. South Indian cooks use it in kootu, mor kuzhambu, sambar and avial, and in the north it is candied into petha.
How to use it
Wipe off the bloom, cut the gourd into wedges, peel the skin and scoop out the seeds and the spongy centre. Cube the flesh for a moong dal kootu with coconut and cumin, or simmer it in a yoghurt based mor kuzhambu with green chilli and curry leaves. It cooks in 10 to 15 minutes and turns translucent when done. For petha, soak the cubes in lime water, then cook them in sugar syrup until glossy.
