Amoy Oyster Sauce is a thick, dark, savoury sauce from Hong Kong, made with oyster extractive, sugar and salt and thickened with corn starch. It brings a rich, rounded, slightly sweet flavour to Cantonese cooking and is what gives beef and broccoli, oyster sauce greens and many noodle dishes their glossy coating. How to use it
Stir a tablespoon or two into a stir fry of beef, chicken, prawns or mushrooms in the last minute, with a splash of water to loosen it. Spoon it warm over blanched pak choi, choi sum or Chinese broccoli with fried garlic. Mix it with light soy and a little sugar for fried noodles and fried rice, or add it to marinades for chicken wings and ribs. Keep the bottle tightly closed in the fridge after opening.
