Amoy Light Soy Sauce is the everyday seasoning soy of Cantonese cooking, naturally brewed in Hong Kong. It is thinner, paler and saltier than dark soy, with 14% soyabean, and it seasons a dish without turning it brown. Chinese cooks reach for light soy in stir fries, dipping sauces, steamed fish and soups, and it works the same way in Indo-Chinese noodles and chilli dishes. How to use it
Add a tablespoon to a vegetable or chicken stir fry in the last minute of cooking, or toss it through Hakka noodles and fried rice. Mix it with rice vinegar, chopped garlic and chilli for a dumpling dip, or pour it with hot oil, spring onion and ginger over steamed fish. Season clear soups and egg drop soup with a splash. Taste before adding salt, as light soy is salty. Keep the bottle closed in the fridge after opening.
