Diamond Foods Golden Pomfret Whole is golden pompano, Trachinotus ovatus, a farm raised fish frozen whole with its silver skin and golden fins. The flesh is white, firm and mildly sweet, with few small bones, which makes it a favourite for frying whole or baking with a spice paste. The bag holds 1.6kg of fish, enough for several meals. How to use it
The pack says to defrost thoroughly and cook fully prior to consumption. Thaw in the fridge, gut and rinse, then cut deep slashes on both sides. Rub with chilli powder, turmeric, salt and lime and shallow fry until crisp, or spread with a green chilli and coriander paste and bake or grill. Golden pomfret also holds its shape in a light coconut curry.
