A 4kg net of red onions for households that cook every day, a large family, or a batch of biryani, pickle or onion bhajis. Red onions bring sweetness and colour to a dish, and they keep well in a cool, airy place. Fry them golden for curry and biryani, slice them raw for salads and kebabs, or caramelise them slowly for seeni sambol.
How to use it
Open the net and spread the onions out if you have space, and pick out any soft ones so they do not spoil the rest. For crispy fried onions, or birista, slice thinly, salt for 10 minutes, squeeze and fry in batches in hot oil until deep brown, then drain on paper; they keep for a week in a jar. For bhajis, mix thin slices with besan, chilli, cumin and a little water.
