Khatti meethi chutney is the dark red sweet and sour one that goes over chaat, the counterweight to the green mint chutney. Haldiram's make it with mango slices, sugar and spices and freeze it in five 70g cups, so you thaw one cup for a plate of papdi chaat and leave the rest solid. The carton holds 350g in all. How to use it
Lift out one cup and leave it in the fridge until it loosens, then stir it before spooning. Drizzle it over bhel, sev puri, papdi chaat, dahi vada or samosa chaat, alongside something sharp and green so the plate is not all sugar. Keep the cups you are not using frozen.
