Garam masala is the warm blend that goes in at the end of cooking, when the heat is off and the aromatics still have somewhere to go. Fudco grind theirs in the UK from coriander and cumin with cinnamon, clove, nutmeg, cardamom and bay, and a little chilli and black pepper behind them. How to use it
Hold it back until the curry is nearly done, then stir in half a teaspoon and cover the pan for two minutes so the steam carries the scent through. It also seasons kheema, a pot of chhole, roast potatoes and the yoghurt in a marinade. Cooking it hard from the start will flatten the cardamom and the clove, so keep it for the finish.
