Black pepper ground to a fine kitchen powder, pale grey brown and ready to use, in a 100g bag that fits a spice drawer. Ground pepper gives heat straight away where cracked pepper gives you bursts of it, so this is the one for marinades, rubs and anything where the pepper has to spread evenly through the mixture. How to use it
Add it late. Pepper loses its edge over a long simmer, so stir it in near the end of a rasam or a pepper chicken and let it sit for a minute off the heat. It also goes into a dry rub with salt and turmeric for fried fish, into the egg for an omelette, and over a plate of fruit chaat with salt and chilli.

- Add it towards the end of cooking to keep the heat
