Ajwain, or carom seed, is the small ridged seed that smells of thyme and tastes hotter than it looks, which is why a pinch goes a long way. Fudco pack it whole in 250g, enough to keep a jar by the hob and still have some in the cupboard. A few seeds crushed between the fingers change the smell of a whole kitchen. More of the same aisle is in our Ajwain range.
How to use it
Rub the seeds in your palm before they go into the pan so the oil in them starts to come out. They belong in the dough for parathas and masala puri, in a besan batter for pakora, and in the tempering for a heavy dal or a dish of kala chana. In a Gujarati kitchen they go into the water for boiling beans and into the sev and ganthiya mixture.
