Plain cooking salt in a 1.5kg bag, fine enough to dissolve straight into a pan and free running thanks to a small amount of anti-caking agent. This is the everyday salt for the pasta water, the dal, the dough for chapatis and the brine for a pickle, bought in a size that lasts a household that cooks from scratch. How to use it
Season in layers as you cook instead of all at the end, since salt added early draws flavour out of onions and tomatoes while they fry. A heaped teaspoon per litre is about right for boiling water for rice or pasta. Decant what you need into a small pot by the hob and fold the bag over, because salt pulls damp out of the air.
