Everest Pav Bhaji Masala is the teal carton for the mashed vegetable bhaji served with buttered pav. It carries the sour, slightly smoky note that marks pav bhaji out from a plain mixed vegetable curry, and a tablespoon goes into 500g of boiled vegetables. The carton holds 100g. How to use it
Fry garlic paste and chopped onion in oil until soft, add chopped tomatoes with a tablespoon of the masala, chilli powder and salt, and roast the mixture until the oil separates. Stir in boiled potato, peas, cauliflower and capsicum, mash it down on the heat for two or three minutes and finish with butter and coriander. Serve with pav, raw onion and lemon.
