Encona West Indian Original is built on habanero mash, which makes up 64 per cent of the bottle, with scotch bonnet peppers and island spices behind it. It pours thin and sharp, so a few drops wake up jerk chicken, fried fish, rice and peas, or a bowl of soup at the table. The bottle holds 142ml and carries the Vegan trademark. How to use it
Shake the bottle, then start with two or three drops on the side of the plate and work up from there, because the heat builds. It also stirs into mayonnaise for a dip, into a marinade for wings, or into the pan at the end of a stew when the seasoning needs a lift.
