Encona Thai Sweet Chilli is the mild bottle in the range, two chillies out of five, thickened with sugar syrup and cut with lime and garlic so the sweetness has something to push against. Chilli mash makes up 15% of it, which is why the heat is there at all. It is the dipping sauce for spring rolls and prawn crackers, and it glazes chicken wings without any other work. How to use it
Pour it into a small bowl for spring rolls, samosas, fishcakes or grilled halloumi. In the pan it works as a quick glaze: toss cooked chicken or prawns through a couple of spoonfuls over a high heat until it goes sticky, then finish with lime and coriander.
