Encona African Peri Peri is the sharp, lemony end of the range, built on bird's eye chillies with garlic and a good hit of acidity behind them. It is rated four chillies out of five on the bottle, so it bites, and the lemon keeps it bright instead of heavy. Use it on grilled chicken the way a peri peri sauce is meant to be used. How to use it
Brush it over chicken thighs or a spatchcocked bird in the last few minutes under the grill so the sugars catch without burning, and keep some back for the table. It also loosens into a marinade with oil and more lemon, and a spoonful lifts rice, chips or a plain fried egg.
