Amoy Dark Soy Sauce in the 250ml bottle is a naturally brewed Hong Kong dark soy with no added preservatives. It is darker, thicker and sweeter than light soy, with 15% soyabean, sugar, salt, wheat flour and caramel colour, and it gives braised meats, noodles and fried rice a deep brown gloss and a mellow, rounded salt. How to use it
Use it with light soy: the light for salt, the dark for colour. Stir a tablespoon into red braised pork, soy chicken or a beef and ginger stew and simmer until glossy. Add a teaspoon to fried rice, Hakka noodles, chilli paneer or gobi Manchurian near the end of cooking. Brush it on chicken wings or pork ribs with honey and garlic before roasting. Keep the bottle tightly closed in the fridge after opening.
