Fudco Crushed Chilli is dried red chilli broken into flakes with its seeds, the kind of chilli flakes that sit on the table in a pizza shop and in the masala box of a Punjabi kitchen. The flakes give heat in visible red specks and a toasted chilli flavour that blooms in hot oil. The 250g bag suits a kitchen that cooks with chilli most days. How to use it
Fry a pinch in oil with garlic and cumin for a tarka over dal, or add it with the onions in a karahi or keema. Mix it into seekh kebab and burger mince, shake it over pizza, pasta and eggs, or stir it into chilli oil and stir fries. Crushed chilli gives a tidier heat than fresh chilli in pickles and chutneys. Tip some into a small jar for daily use and keep the bag sealed, as the flakes lose colour in light.
