Mathangi Ceylon Roti is a soft, folded flat bread in the Sri Lankan style, made from maida with just sunflower oil, water and salt, and stretched thin before being folded into neat, layered squares. It is the roti served alongside curries in Sri Lankan and South Indian homes, soft and layered with a tender bite. How to use it
For best results, thaw the roti to room temperature and remove them from the packet. Heat in the microwave or on a frying pan and serve hot; butter or margarine can be added. The roti can also be heated in a toaster. Serve with chicken or mutton curry, dhal, sothi or a spicy egg curry, or tear into pieces for a quick kothu.
