The large bag of Araliya sudu kekulu covers a busy kitchen for weeks: plain white rice for lunch, kiribath on special mornings and soaked rice for a batch of appam. Because it is milled raw, the grain cooks soft and slightly sticky and blends smoothly once soaked. It pairs well with red and parboiled grains from our Sri Lankan Rice collection when you want a mix on the table.
How to cook it
Rinse and cook with twice its volume of water, covered, until the water has gone. For kiribath, cook with a little more water and fold in thick coconut milk and salt at the end. Leave the bag sealed between uses so the grains stay dry.
