Araliya Red Raw Rice is rathu kekulu: red rice milled straight from the paddy with no parboiling. It cooks softer and stickier than red nadu, with a gentle earthy taste, which is why Sri Lankan cooks use it for red kiribath, kanji and the soft rice served with a mild curry. How to cook it
Wash the grains well. For plain rice, use about two cups of water to each cup of rice and simmer covered until tender. For kiribath, cook with a little extra water, stir in thick coconut milk and salt once the rice is soft, then press into a tray and cut into diamonds.
