The 10kg bag of Araliya rathu kekulu suits a household that makes milk rice every week and red rice porridge when someone is under the weather. Because this red rice is milled raw, the grain releases more starch as it cooks, giving the creamy, clinging texture that kola kanda and kiribath need. How to cook it
Rinse twice and drain. Simmer with around twice the volume of water under a lid until the grains are soft. For kanji, keep adding water and stirring until it turns to a loose porridge, then finish with coconut milk and a pinch of salt.
