Araliya Red Nadu Rice is rathu nadu, the red parboiled rice that fills the plate at a Sri Lankan lunch of rice and curry. The bran stays on the grain, so it cooks up a deep russet colour with a nutty bite and holds its shape under a ladle of dhal, a fish ambul thiyal or a pol sambol. How to cook it
Wash the rice two or three times until the water runs clearer. Cook one cup of rice with about two and a half cups of water, covered, on a low flame until the water is absorbed and the grains are tender, then leave it to rest for ten minutes before fluffing with a fork. A rice cooker on its standard setting works well too.
