This is the large bag of Araliya rathu nadu, red parboiled rice from Sri Lanka, for a family that cooks rice at lunch and again at dinner. Parboiling before milling sets the starch, so each grain stays separate and firm even when the pot is kept warm for a second helping. The red bran gives an earthy flavour that sits well with a tempered potato curry, a coconut gravy or a plate of mallung. More red grains are in our Sri Lankan Rice collection.
How to cook it
Rinse until most of the cloudiness has gone. Bring the rice to the boil in roughly two and a half times its volume of water, turn the heat right down, cover and cook until tender and dry, about thirty minutes. Rest it with the lid on before serving.
