Araliya Broken Keeri Samba Rice is kadunu keeri samba: the tiny, fragrant keeri samba grain in broken pieces. Broken grains release their starch fast, so the rice cooks thick and creamy, which suits kiribath on a Sinhala and Tamil New Year morning, for kola kanda and for a soft breakfast rice. How to cook it
Rinse once and drain. For kiribath, boil one cup of rice in two cups of water until soft, pour in a cup of thick coconut milk with a little salt, and stir over a low flame until it pulls away from the pan. Spread it on a plate, flatten and cut into diamonds while warm.
