The 10kg bag of Araliya kadunu keeri samba is for the family that makes milk rice for every birthday, Poya day and new month. The small broken pieces of keeri samba cook down faster than whole grains and give a smooth, set kiribath that slices cleanly. They also make a comforting rice porridge with garlic and coconut milk. The whole grain version sits in our Sri Lankan Rice collection.
How to cook it
Use about twice as much water as rice and simmer until the grains are swollen and soft. Add thick coconut milk and salt for kiribath, or keep it looser with more water for kanji. Serve kiribath with lunu miris or a sweet kithul jaggery.
