How to use it
Break the tomatoes up with your hands in the pan; blended, the sauce turns thin and the seeds go bitter. Use them for a big pot of curry base cooked until the oil separates, a makhani or butter chicken sauce, a ragu or a pizza sauce. Once opened, decant what is left into an airtight container and use it within three days.
