Suryaa Mustard Oil is pressed in India from mustard seed alone and, unlike many mustard oils sold in the UK, it is labelled as a food, with a full nutrition panel on the bottle. It has the dark amber colour and the sharp, nose tingling heat that Bengali, Punjabi and Kashmiri cooking depends on.
How to use it
Heat it until it just starts to smoke, then let it cool a little before adding the spices; this softens the raw bite. Use it for shorshe maach, aloo posto, sarson ka saag, achar and Kashmiri dum aloo. A few drops of raw oil over a jhal muri or a mashed potato bharta give the authentic kick.
