Mustard oil with the edge taken off: 51% mustard seed oil, the rest rapeseed. The pungency is still there when you heat it, which is the point in Bengali and Punjabi cooking, but it is gentler than a neat pressed mustard oil and cheaper to cook with.
Smoke it first in the pan and let it settle before the spices go in. It belongs in fish curry, in sarson ka saag, in pickles, and rubbed over aubergine before it goes under the grill.
A litre is the household bottle. If you get through it, the four litre tin works out cheaper.
