Shama Chakki Gold Atta is a whole wheat chapati flour from Shama of Paris, stone milled in the chakki style so the bran and germ stay in the flour. The pack is labelled as a source of fibre and iron, and the flour gives rotis the pale golden colour and gentle wheat flavour that the Shama range is known for. The 5kg bag comes with a cord carry handle and suits households that make rotis daily.
How to use it
Measure about 100g of atta per two rotis into a wide bowl with a pinch of salt. Add warm water gradually and bring the flour together with your fingers, then knead for five minutes to a smooth, pliable dough. Rub with a little oil, cover and rest for twenty minutes. Roll thin rounds, dusting lightly so they do not stick, and cook on a hot tawa for about thirty seconds a side before finishing over the flame to puff. The dough also makes layered parathas and, with a little less water, crisp puris.
