Samayal Gingelly Oil is made the Jaffna way, from sesame seed with one per cent palm jaggery pressed in alongside it, which rounds off the bitterness sesame can have and gives the oil its mellow, slightly sweet finish. It pours a clear gold, lighter than a black sesame oil, and smells of fresh sesame.
How to use it
Use it where the oil should be part of the flavour: frying the onions, curry leaves and fenugreek for a Jaffna kuzhambu, finishing a brinjal curry, or making a jar of lime pickle. It is also good stirred into hot rice with a spoon of paruppu. Seal the cap after use and keep it out of the sun.
