Mathangi gingelly oil, 750ml, pressed from sesame seed and sold under the Tamil name most people use for it, nallennai. It is darker and nuttier than a refined oil and is meant to be tasted rather than hidden, which is why South Indian cooking reaches for it in particular dishes and not as an everyday frying oil.
How to use it
Use it for the tarka in sambar and rasam, over idli podi, in a vathal kuzhambu, and in pickles where it acts as the preservative as much as the fat. A spoonful stirred through warm rice is a dish in itself. Plenty of Tamil households also use it on the skin and hair before a bath.
