Lund's California Squid is whole, wild caught market squid from the Pacific coast of California, frozen and packed by Sun Coast Calamari for Lund's. Caught by purse seine in FAO Zone 77, the squid comes whole, so it can be cleaned and cut into rings, tubes or tentacles to suit the dish. How to use it
The squid is raw and intended to be eaten fully cooked. Thaw it in the fridge, then pull away the head and tentacles, remove the clear quill and skin, and slice the body into rings. Cook it quickly over high heat for tender calamari, dust it in spiced flour and fry, or stir fry it with chilli, garlic and curry leaves, or simmer it slowly in a Sri Lankan or Kerala style squid curry. Keep frozen and do not refreeze once thawed.
