Lund's is a seafood brand from the United States, and the squid we carry is California market squid, a small, tender species caught wild in the eastern central Pacific by purse seine and packed in the USA. It is frozen whole, just as it comes from the boat, which keeps it sweet and firm.
We keep Lund's in frozen prawns and seafood, part of frozen fish and seafood in our frozen department. Because the squid is whole, with head and tentacles, it needs cleaning before cooking, but that also means you can cut it exactly as a recipe asks: rings, tubes for stuffing or scored pieces for the grill.
To clean, pull the head and tentacles from the body, remove the clear quill and the innards, peel away the thin skin and cut the tentacles just below the eyes. For a squid fry, slice into rings, marinate in chilli powder, turmeric, ginger garlic paste and lemon, then fry hard and fast. For a Sri Lankan dhallo curry or a Kerala koonthal roast, cook it either very briefly or slowly for a long time with onion, coconut and spice, since anything in between turns rubbery.
Keep frozen at -18°C, thaw overnight in the fridge and cook thoroughly; do not refreeze once thawed. For a ready blend to go with it, browse fish masala, and for white fish fillets see frozen fish.
