Harischandra Noodles are plain dried wheat noodles from Sri Lanka, made with wheat flour and salt and nothing else, with no seasoning sachet in the pack. Sri Lankan homes boil them and then stir fry them with onion, curry leaves, vegetables, egg or chicken, or serve them with a curry. The 400g pack holds eight 50g servings, enough for a family meal. How to use it
The pack method: mix two teaspoons (10g) of salt into 2.5 litres of water and bring it to the boil. Add the noodles and simmer for 7 to 10 minutes, then wash them in cold water and drain well. From there, toss them in a hot pan with oil, sliced onion, green chilli, curry leaves and shredded cabbage or carrot, then add scrambled egg, prawns or leftover chicken curry and season to taste.
