How to use it
Bloom a spoonful in hot oil or ghee for a few seconds before adding onions and tomatoes, or beat it into yoghurt with ginger, garlic and garam masala for a tikka or tandoori marinade. Blend it with a hotter chilli powder to set the heat you want. Decant some into a jar for daily use and keep the bag tightly closed, away from light, so the colour does not fade.
