Fudco Kashmiri Chilli Powder (Mild) is ground Kashmiri chilli, prized for the deep red colour it gives a dish more than for heat. Cooks use it in rogan josh, tandoori marinades, butter chicken and makhani gravies, where they want a rich colour without making the curry fiery. The 250g pack is a handy size for regular cooking. How to use it
Stir a teaspoon or more into hot oil or ghee for a few seconds, just until it turns the oil red, then add onions or tomatoes. Use it generously in yoghurt marinades for chicken tikka, paneer or lamb, and mix it with hotter chilli powder if you want both colour and heat. A pinch over dal tadka or devilled eggs gives a bright finish. Keep the pack sealed so the colour stays strong.
