Fudco Basmati Mumra in a 400g bag is the same puffed basmati rice as the smaller pack, enough for a big batch of chevdo or bhel for guests. Basmati grains puff long and thin, so the mumra is light and crisp with a clean rice flavour, and the bag lists basmati rice as its only ingredient. How to use it
Warm a little oil, crackle mustard seeds, curry leaves and a pinch of hing, add turmeric and chilli powder, then toss in the mumra with roasted peanuts, chana dal and a little sugar and salt for a quick chevdo. Keep tossing over a low heat until the rice is coated and crisp, then cool before storing. For bhel puri, mix the mumra with chopped onion, tomato, boiled potato, sev and green and tamarind chutneys just before serving. Fold the bag closed or tip it into an airtight jar once opened.
